Easy Crustless Quiche

This quiche is an easy fix and extremely versatile. The cheeses and meats can be substituted with your favorites or you can opt for non-dairy cheese and no meat for a vegetarian option. A big thanks to our friends at Bon Appetit for the inspiration.

Ingredients

  • 8-10 large Braswell Family Farms eggs
  • 1 cup of milk
  • 1 cup cream
  • 1-2 cups of shredded cheese of your preference, we used mozzarella
  • Canadian bacon (or breakfast meat of your choice)
  • Rosemary sprigs to taste

Directions

  1. Whisk around 8 to 10 eggs1 cup milk, and 1 cup cream together, and pour the mixture onto a rimmed metal baking sheet.
  2. Sprinkle several generous handfuls of cheese—use whatever you’d like, but I use shredded mozzarella, which is low in moisture—on top.
  3. Follow that up with Canadian bacon or the breakfast meat of your choice such as crispy bacon, sliced deli ham, and cooked sausage.
  4. Finish it off with fresh rosemary sprigs on top, which will make the house smell amazing for guests.
  5. Bake at 350° for about 35 to 40 minutes, or until the top looks golden brown and the texture is firm and springy to the touch. Cut it into little squares for serving and serve it piping hot for one or 100—whoever’s lucky enough to try it.
