Cheddar Bacon Biscuits

Happy National Bacon Day! These Cheddar Bacon Biscuits are a great appetizer or finger food for New Year’s Eve parties or a savory New Year’s Day breakfast treat.

This recipe makes about 48 biscuits, which can be a good amount if its just you and your family. Half the recipe or freeze half of the dough to make later!

Ingredients

  • 14 Braswell Family Farms eggs (large)

  • 5 lbs. all-purpose flour

  • 4 Tbsp. baking powder

  • 2 Tbsp. salt

  • 1 1/4 tsp. pepper blend seasoning

  • 1/4 cup sugar

  • 1 lb., 8 oz., butter

  • 1 1/2 cup milk

  • 4 cups shredded sharp cheddar cheese

  • 1 1/2 cup. real cooked bacon bits

Directions

  1. Preheat oven to 375 F

  2. Sift flour, baking powder, salt, pepper and sugar together in a large bowl.

  3. Using a 3-speed mixer at second speed, cut butter into flour mixture for about 2 minutes. Add the eggs and milk into mixture and blend and then add cheese and bacon and mix just until blended.

  4. Scale into 8 (1 lb., 8 oz. each) portions. Knead 4-5 times. Fold each into 6-inch round loaves.

  5. Use 3-inch cutter for biscuits or cut each into 6 pieces for scones. Place on greased or lined baking sheets so the biscuits just barely touch. This will allow for better rising.

  6. Bake the biscuits for 20 minutes, remove from oven and allow to cool for 2-3 minutes.
